Lunch Ideas?

Ok, so I'm feeling guilty. I just ate a peanut butter and jelly sandwich, potato chips, grapes, chocolate milk, and some chocolate chips melted in the microwave with coconut mixed in. I think I may start rolling in mud and snorting at any minute.

When I was working, lunch was taken care of. I would order the same thing every day- a baked potato with cottage cheese on top, a salad with red beets & ranch dressing, and a carton of milk. It wasn't bad for a $2.50 school lunch.

Now that I'm home during the day it's so easy to snack on junk and I really don't want to start forming bad habits and oinking so please help me out. What are some quick & healthy lunch ideas?

I have a great hummus recipe, which goes perfect with a little whole wheat pita or naan (my personal favorite, I also have recipe for) paired with an fresh veggie salad, onion, cucumber, tomato a little feta maybe some kalamata olives and a dash of olive oil and vinegar! Delicious, healthy and super fast to fix!

Costco sells bags of grilled, sliced chicken breasts. They taste really, really good for packaged chicken too. Throw them on a spinach salad or cut them up smaller for chicken salad. I have a good chicken salad recipe too that involves grapes. Eating fruit cancels out mayo, right? That's what I'm telling myself anyway. Who am I kidding, I ate leftover potato salad and Hayden's school fundraiser chocolate for lunch yesterday. Good luck to ya sister, we all need it.

A suggestion from a non-cook - I swear by Lean Cuisines. The advantages: variety - you can have something different every day. Calorie and portion controlled. Easy and ready in just a few minutes. No dishes - just cook, eat and toss. If I need a little something sweet to top off the meal, I go with sugar free jello.

I need lunch ideas too! My problem is I work in a smaller town than I live in and don't have many choices. I have been trying to take leftovers and then eat tv dinners. When I am home I get the grilled chicken and wrap the chicken in a tortilla shell with ranch and worchestrie sauce.

Lettuce wraps - use that Costco chicken and wrap it in iceberg lettuce with cilantro, mint, cucumber, and a squeeze of lime. We like to dip it in sweet thai chili sauce (not so much on the healthy side).

I also made a black bean tostada salad which included a can of black beens, can of corn, can of green chilies, cumin, olive oil, cilantro, lime juice. We served it over tostadas and it was amazing. The leftovers made great salsa to dip tortilla chips.

Can't you just show up at school for the lunch??? I like the idea of the fozen lean cusines dinners too. They are fairly healthy and microwavable. Also my main stay is deli meat on multi-grain bread,dill pickles and a carton of yogurt. Who says you can't have a healthy pizza delivered occasionally?? (I think we all have a membership to the "Oink Club) at times!! Love, G>R>
